這個食譜已經收藏很久了
一直遲遲沒動手的原因 是因為雞肉要炸過
不喜歡炸東西時的油煙 而且要浪費好多油
前幾週試做了一次 挺成功的
所以請客時又做了一次 也大獲好評
雖然要油炸 但是看在大家都很捧的面子上 也很開心!
食譜出處是安琪拉的小天地
以下是我整理過的食譜 紅字的部份是所做的修改
General Tso Chicken
Ingredients:
- 1 lb. boneless chicken thigh, cut in 1 inch cubes (I use chicken breast)
- 8 hot dry pepper (cut down to 2)
- 1/4 cup green onion (use onion instead)
- 1/2 green pepper (use one green pepper and one red pepper)
- potato starch for coating the chicken
- oil for deep fried
A. marinades for chicken :
- 1 egg
- 1/4 tsp salt
- 2 Tb potato starch (太白粉)
B. sauce:
- 2 1/2 TB soy sauce
- 2 tsp sugar
- 3 tsp black vinegar
- 1 1/2 tsp cooking wine
- 1 TB minced ginger (I use 2 Tb)
- 1 Tsp minced garlic (I use 2 tsp)
Preparation:
- Cut the chicken into 1-inch cubes. Combine the chicken cubes with A (egg, salt, and potato starch). Marinade for at least 15 -20 mins
- Make B. sauce
- Heat the oil to 350 degree.
- Coat chicken with potato starch and deep fried for 1 1/2 to 2 mins, drained and keep warm.
- Heat 1/2 Tb oil and fry the hot dry pepper for 15 seconds
- Add onion and pepper and stir for 30 seconds
- Add the fried chicken and stir for 1 min than pour the sauce (B) evenly
- Stir for 1 to 2 mins than serve immediately.
這道菜除了需要油炸之外 其實還算簡單
老公也很愛 請客也還滿上的了檯面的~ 顏色很鮮豔美麗
因為要省油的關係 我的油只蓋到雞肉一半高度 炸好一面再翻面炸
食譜減辣椒是因為我家老公不吃辣 所以只放兩根提味
喜歡辣的可以多放一些 加紅椒洋蔥除配色之外 味道也搭!
